Fly to Palma where you can make the short transfer into the centre to stay at the Convent de la Missio – a beautiful former convent dating back to the seventeenth century.  This hotel prides itself on combing art with urban living and it is brilliantly located to explore the city, discover the cathedral, hang out in the local restaurants and then head back to sit by the roof top pool. City life complete we would recommend you jump in a hire car which has been conveniently delivered to the hotel on the morning of your departure and head north to the northern town of Pollenca taking in Inca on your way.  Just in case you fancied another gastronomic treat we would recommend that you try Es Ginebro. Granted this is a vegetarian restaurant which might not be to everyone’s tastes but it is definitely worth a visit for its organically home grown ingredients.

 

Check-in to the beautiful Son Brull, another former convent which has been beautifully converted inside and out to transform it into a sophisticated private hideaway.  Set in its own vineyard, olive grove and citrus orchard, the emphasis is very much on traditional hospitality and attention to detail.  You are going to find it hard to extract yourself from the pool but if you can head into the ancient rural town of Pollenca where if there is any space in your suitcase you can wander through the boutique-lined back streets before pulling up a chair on the main square, ordering a cocktail and watching the world go by.  There is plenty of exploring to be done in the north of the island whether it be by car, on foot or by taking out one of the hotels bikes to build up an appetite for dinner in the hotel’s restaurant, Restaurant 365, where head chef Rafel Perelló sources traditional Mallorcan ingredients – many from the hotel’s own grounds and groves – to create exquisite à la carte dishes.
